1. Scope and Applicability

This PCR governs foreground data packages for fermentation-derived sparkling wine made from fresh grapes, grape must, or base wine. The foreground boundary begins with the declared winery-gate input condition and ends with net sparkling wine in its declared pressure-resistant package at winery dispatch. It covers base-wine preparation when performed onsite, primary alcoholic fermentation, cuvee preparation, secondary fermentation by the traditional bottle route or closed-tank route, route-specific ageing and clarification, dosage, cleaning, refrigeration, packaging, and onsite wastewater treatment.

The dataset shall declare whether the entry material is fresh wine grapes, grape must, or base wine and shall not count the upstream production of a purchased same-category input again. Aerated sparkling wine made wholly or partly by injected carbon dioxide, semi-sparkling wine below the declared sparkling-wine pressure specification, aromatised wine, fruit wine, distilled wine products, wine vinegar, and products not made from fresh grapes or grape-derived intermediates are excluded. Vineyard operations, inbound transport, distribution, retail, consumption, and packaging end of life require linked datasets when included in a wider study.
