1. Scope and Applicability
This PCR governs foreground data packages for yoghurt and other milk or cream products whose defining transformation is microbial fermentation, direct acidification, or both. It covers plain, flavoured, fruited, concentrated, heat-treated-after-fermentation, drinkable, spoonable, and other market forms when the product remains a fermented or acidified dairy product. It also covers fermented and acidified cream.
The PCR does not cover unfermented drinking milk, cheese, butter and anhydrous milk fat, dried whey ingredients, frozen dairy desserts, plant-based analogues, or products in which the dairy portion no longer defines the product. Raw-milk farming and transport to the dairy are upstream rather than foreground processes. Distribution, retail, consumer refrigeration or use, and end-of-life are outside the core factory-gate foreground package unless a declared study expands the boundary.
The canonical foreground result is un-packaged product at the manufacturing facility cold-storage or dispatch gate. Product formulation, species, fat and dry-matter content, microbial or direct-acidification route, post-fermentation heat treatment, concentration, flavouring, packaging status, geography, and reference period are mandatory qualifiers.
