1. Scope and Applicability
This PCR governs foreground data packages for grape must and non-sparkling wine made from fresh grapes. It covers winery-gate production from receipt of fresh wine grapes through must preparation and, for wine, alcoholic fermentation, clarification, stabilisation, maturation, and dispatch in bulk or in declared packaging. Grape cultivation and transport to the winery are represented by upstream datasets; downstream distribution, retail, consumption, and packaging end of life are outside the foreground boundary unless the declared study expands them.
Sparkling and carbonated wine, vermouth and other aromatised wine, fruit wine, grape juice, distilled wine products, wine vinegar, and winery processes based only on non-grape feedstock are excluded. The data package shall declare whether the reference product is grape must or non-sparkling wine and shall apply only the route-specific processes and atomic exchanges that actually occur.
