1. 范围与适用性

本 PCR 为一个有意收窄的代表产品生产前景数据包:整只山羊肝,去除胆囊,并修除可见污染、病变、不合格组织和非肝附着物;使用饮用水清洗;由 R717 氨制冷系统提供的强制气流冷却;装入 PA/PE 真空袋密封,再装入瓦楞纸箱,并在 0–3 °C 下从屠宰场冷库交付。本 PCR 不表示肝、肾、心、肺、舌、胃、肠或其他组织的平均,也不平均鲜、冷藏和冷冻状态。

前景边界从屠宰场接收的活山羊开始,纳入屠宰放血、卫生取脏及组织身份保持、肝脏分离修整、饮用水清洗、强制气流冷却、真空包装、冷藏暂存及可归属的清洗消毒。山羊养殖和活畜进场运输作为上游关联数据集。声明的屠宰场交付门之后的配送、零售、烹饪、消费和包装生命末期属于下游。

排除未经主动冷却而交付的鲜肝和任何冻肝路线。这两种状态均须另行声明路线并编制清单,不得与本冷藏肝路线混合。还排除调制、熟制、盐渍、干制、熏制、绞碎、提取或配方化的内脏产品。
