1. Scope and Applicability
This PCR is a deliberately narrow, non-averaged implementation within CPC 3.0 class 21155. It applies only to edible sheep liver delivered chilled at the processing-facility gate. The fixed route receives live sheep at an integrated slaughterhouse, performs slaughter and evisceration, separates the red-offal pluck, trims and washes the liver with potable water, chills it by forced air in a central ammonia (R717) refrigeration system, packs it in LDPE film and corrugated-fibreboard cartons, and transfers wastewater to off-site treatment.
Fresh or frozen liver, kidneys, hearts, tongues, lungs sold as the reference product, mixed-offal packs, goat offal, rendered products, cooked products, retail storage, distribution and consumer preparation are outside this PCR. Hearts, lungs and tracheae that physically arise on the locked route are separate co-products, never substitutes for or averages with the sheep-liver reference product.
No default utility, material, yield, refrigerant-loss, waste or pollutant quantity is prescribed. A conforming first dataset uses facility records or the calculation rules below. The official and literature sources support process inclusion, hygiene, temperature control, wastewater characterisation and allocation method; they do not replace foreground measurements.
