1. Scope and Applicability

This PCR covers unrendered fatty tissue or fat-bearing raw material separated from cattle after slaughter, dressing, deboning, or cutting and handed over without a rendering step. The material may be intended for food, for a prescribed treatment before food use, for feed or pet-food use, or for another declared non-food use, but its actual eligibility and disposition must be stated from competent-person or competent-authority records. A food-use claim is not implied merely by the product name.

The default foreground begins when an identified cattle fat-bearing stream is separated from an inspected carcass or cutting stream. It includes stream-specific trimming and sorting and, when performed before the declared handoff, chilling or freezing, packing, on-site storage, and delivery. Shared cattle-production and slaughterhouse burdens enter through linked upstream datasets and the declared co-product method; they are not silently reassigned to the trimming operation.

Rendering, low-temperature rendering, melting, extraction, fractionation, refining, bleaching, deodorisation, hydrogenation, or formulation is excluded by default. Rendered cattle fats such as premier jus, edible tallow, greaves fat, marrow oil, bone oil, foot oil, and their fractions are outside this category. CXS 211-1999 describes named fats obtained by rendering and therefore supplies only a boundary contrast and possible downstream-use context; its composition and quality values are not specifications or LCA defaults for this unrendered product.
