1. Scope and Applicability
This PCR governs foreground data packages for edible duck meat that leaves primary processing fresh or chilled, as a whole carcass or declared cut, and has not been frozen or transformed into a meat preparation or meat product. The normal foreground route begins with live ducks received at a slaughter facility and ends with saleable fresh or chilled duck meat at the processing-facility gate after slaughter, dressing, inspection, washing, chilling, and any declared cutting and packaging.
The PCR covers industrial, small commercial, and equivalent hygienically controlled slaughter routes when the actual technology and market state are disclosed. Duck farming, hatchery operations, feed production, and transport before the declared slaughterhouse receiving point are represented by upstream datasets or separately modelled processes. Retail, cooking, consumption, downstream refrigerated distribution, frozen duck meat, foie gras, edible offal sold as a separate product, rendered fat, mechanically separated meat, and further-prepared or cured products are outside the reference product scope.
