1. Scope and Applicability
This PCR covers unbreaded fish fillets that are cut from food-grade fish, quick-frozen, optionally glazed, packed, and supplied frozen at the processing-facility gate for direct consumption after normal food preparation. It supports wild-caught and aquaculture species when the source-fish production system, species, origin, and upstream dataset are declared.
The foreground boundary starts with accepted fish at the processing facility and includes receiving and cold holding, filleting, trimming, washing, optional skinning and deboning, quick freezing, optional glazing, packing, frozen storage, and factory-gate dispatch preparation. Source-fish production and inbound transport are represented by linked upstream datasets. Breaded or battered products, minced fish, formed portions, smoked, dried, salted, canned, cooked, ready-to-eat products, products declared for further industrial processing, retail distribution, consumer cooking, and end-of-life are outside this PCR.
