1. Scope and Applicability
This PCR covers edible fish fillets preserved by drying, dry-salting, wet-salting, brining, brine injection, or combinations of those operations, provided that smoking and smoke-flavouring are not used. The foreground product is a finished fish fillet at the processor gate, sold dried, salted, or immersed in brine as declared by the producer.
The PCR excludes smoked and smoke-flavoured fish, smoke-dried fish, whole or split fish that is not marketed as fillet, minced fish, fish livers and roes, canned or cooked fish preparations, and products whose principal preservation route is freezing without salting or drying. Species, capture or aquaculture origin, incoming fresh/chilled/frozen state, salting route, drying status, final brine inclusion, packaging format, storage temperature, and edible-product moisture or water-activity control must be declared because they materially affect inventory interpretation and food-safety controls.
The foreground boundary begins when raw fish or pre-cut fish fillets are received at the processing facility in their declared temperature state. It ends with one kilogram of net edible finished product, excluding packaging mass, packed and ready to leave the processing site. Upstream fish production or capture, ice, salt, packaging, electricity, fuel, water supply, and inbound transport are represented by linked upstream datasets when included in the study; downstream distribution, retail, preparation, consumption, and end-of-life are outside the default foreground boundary.
