1. Scope and Applicability
This PCR guides production of foreground data packages for crustaceans that are prepared or preserved by operations other than simple freezing, salting, drying, or brining. It covers crabs, prawns, shrimps, lobsters, crayfish, rock lobsters, and other food crustaceans that are boiled, steamed, fried, roasted, otherwise cooked, placed in vinegar, oil, marinade, or sauce, made into paste or pâté, smoked, canned or packed in airtight containers, pasteurized, sterilized, breaded, or otherwise prepared or preserved.
The foreground boundary begins when declared raw, chilled, frozen, live, or previously processed crustacean material is accepted at the processing facility and ends with the packaged product at the manufacturing plant gate. Route-specific operations are included only when they occur. Upstream production of crustaceans, ingredients, packaging, energy carriers, water supply, and other purchased inputs is represented through linked datasets. Distribution, retail, consumer preparation, use, and end-of-life are outside this foreground boundary unless a broader study links separate datasets for those stages.
Complete prepared dishes or meals, crustaceans preserved only by freezing, salting, drying, or brining, and extracts or juices of crustaceans are excluded. This PCR does not prescribe food-safety critical limits; applicable legal, customer, HACCP, and product-specification requirements remain authoritative and their monitored process parameters must be retained as foreground evidence.
