1. Scope and Applicability

This PCR guides foreground data-package construction for cultivated cocoa beans from managed cacao production through pod harvest, pod breaking and wet-bean extraction to the fresh wet-bean farm-gate hand-off. Pod breaking and extraction are required for that reference result, including when performed by a contractor. When postharvest_extension is true, the additional route begins after this wet-bean hand-off and includes only the declared fermentation, drying, cleaning, grading and storage operations. Wet beans in pulp, fermented wet beans and dried graded beans remain separate states.

The exact platform reference identity is Cocoa beans with Production mix, at farm gate and Fresh, unprocessed produce. This candidate therefore declares fresh, unprocessed wet cocoa beans at the farm gate as the reference state. Fermented, dried or graded beans are route-specific downstream states and must not reuse the reference UUID as if their boundary metadata were identical. An extended post-harvest result must declare its gate and retain a lot-level mass and moisture conversion from the farm-gate reference state.

The scope applies to cultivated Theobroma cacao under smallholder, estate, cooperative or aggregated farm management when geography, cultivar group, production system, crop year and gate are disclosed. It covers attributable perennial establishment and productive phases, management inputs, field emissions, mature-pod harvest, pod opening, wet-bean extraction, fermentation, drying, cleaning, grading, storage, quality controls, residues, rejects and documented intended co-products. Wild collection, cocoa paste, cocoa liquor, cocoa butter, cocoa powder, chocolate, prepared foods, consumer products, retail packaging and post-gate distribution are excluded. Pod husk, pulp, sweatings, shell, dust and rejected beans are not automatically products; they remain residues or wastes unless a separate intended output and hand-off are documented.

No n.e.c. or “other” product scope is selected. The classification reference is CPC 3.0 01640, Cocoa beans.

market_statefresh farm-gate cocoa-bean reference state, or separately declared fermented/dried/graded bean hand-off when the post-harvest extension is included

The product category identity follows the platform Cocoa beans row and does not imply identity with cocoa waste or cocoa paste. Route-specific flow cards may remain unmapped or parameterized until a distinct identity is confirmed; the reference UUID must not be copied into a changed material state.

The platform metadata is Production mix, at farm gate and Fresh, unprocessed produce. The reference amount is therefore not a kilogram of dried fermented beans. A post-harvest result may be normalized to 1 kg of the wet reference through measured pod-to-wet-bean and wet-bean-to-dried-bean balances, but its output card remains a distinct fermented/dried state. Tare, packaging, foreign matter, pod husk, pulp, sweatings, shells, dust, rejects and drying water loss are recorded separately.

5. System Boundary

The default foreground boundary starts with the managed cacao stand and declared crop year or perennial phase and ends with fresh wet beans in pulp at the farm gate. It includes attributable establishment and replacement, field management, direct field emissions, mature-pod harvest, pod breaking, separation of husk/placenta and wet-bean extraction. A fresh-pod sale or hand-off is an intermediate boundary and cannot be reported as the wet-bean reference result. Off-site or contracted extraction remains a linked operation with its input/output masses, service burdens and residues included once. The postharvest_extension flag controls fermentation and later operations only; turning it off never removes extraction. Purchased inputs use compatible upstream datasets at the actual receiving state, without also charging their included operations again.

The reference gate is the platform's fresh, unprocessed farm-gate state. Fermented, dried and graded beans are downstream route states within the extended process map, not alternative meanings of the same reference UUID. The data package must state whether the farm-gate reference stops at wet-bean hand-off or whether a post-harvest extension is reported. Roasting, grinding, alkalization, pressing, cocoa liquor, cocoa butter, cocoa powder, chocolate, prepared foods, retail and consumer use are downstream and excluded.

Drying water loss (cocoa_drying_water_loss)

Calculate water removed from wet beans; it is not dried-bean product.

  • Selected flow: Water vapour emitted to air during cocoa drying (UUID unresolved)

  • Flow property / unit: Mass / kg water

  • Amount rule: Determine supported evaporation on a closed water-mass control volume: incoming material water + actual added water + opening water stock - water in all accepted/co-product/reject/residue exits - separate liquid discharge/exports - closing water stock. Use measured wet mass times wet-basis moisture for each material stream, and compatible density for liquid volumes. Internal recirculation cancels. Retain actual rain/rewetting where relevant; total fresh/dry mass difference is not all water. Independently support all terms and the evaporation pathway; investigate an unexplained or negative balance rather than force it into a vapour release or clip it to zero. Keep water quantities distinct from dry-solids loss and other volatiles. Attribute and normalize the evidenced water release once using the original matched final reference.

  • Value mode: Calculated value (calculated_value)

  • Specificity: Site-specific (site_specific) Raw activity or stage basis: per 1 kg wet cocoa beans at farm-gate reference.

No universal numeric bound is established by the cited balance identity or method. Derive a lot/site-specific check from measured inputs, outputs, moisture, growth where applicable, stocks, losses and uncertainty on compatible bases. Report numeric screening unavailable until supported; retain the measured exchange and investigate residuals without clipping or substituting a default.

Inputs

Product flows
Accepted graded fermented cocoa beans (cocoa_storage_input)

Record storage lot, moisture, grade, packaging state and start date. This is not a second use of the wet farm-gate reference flow.

  • Selected flow: Accepted graded fermented cocoa beans [unmapped]

  • Flow property / unit: Mass / kg

  • Amount rule: weighed storage input by lot and grade

  • Value mode: Foreground record (foreground_record)

  • Specificity: Site-specific (site_specific) Raw activity or stage basis: per 1 kg wet cocoa beans at farm-gate reference and per 1 kg dry output.

  • Normalization basis: per declared reference flow

  • Basis kind: Reference flow (reference_flow)

  • Evidence kind: Collected record (collected_record)

  • Collection protocol: cp_cocoa_storage_records

  • Sources: icco-cocoa-processing; icco-cocoa-quality-requirements

No fixed numerical screening bound is prescribed for this row. Derive any lot-specific consistency bound from measured incoming quantities, moisture, stocks, losses and uncertainty on the stated basis. Conservation alone supplies no universal yield, water-use or measurement-tolerance interval. Until compatible evidence is available, report quantitative range screening as unavailable; do not clip measurements or substitute an assumed value.

Electricity, medium voltage (cocoa_storage_services)

Include this exchange only when Electricity, medium voltage is actually supplied to this process. Record every other actual carrier separately. For purchased operating services, retain the supplier boundary and do not also count fuel or electricity already included in that service. Raw activity or stage basis: per 1 kg dried cocoa bean output and storage day.

  • Selected flow: Electricity, medium voltage
  • Flow property / unit: Energy / kWh
  • Amount rule: Measured Electricity, medium voltage supplied to this process and period, normalized once to the declared reference output; convert carrier-native units only with documented density, calorific value or meter conventions where needed.
  • Value mode: foreground_record
  • Specificity: site_specific
  • Normalization basis: per declared reference flow
  • Basis kind: process_output
  • Evidence kind: collected_record
  • Collection protocol: cp_cocoa_storage_records

Paperboard packaging (cocoa_storage_services_paper)

Record Paperboard packaging only when this material crosses the declared process boundary. Retain lot, physical state, composition where relevant, and actual destination. Record other materials independently rather than treating this card as a selector or material bundle. This is a conditional material example, not a packaging requirement. Measure reuse and replacement and allocate the material once across its documented uses. Raw activity or stage basis: per 1 kg dried cocoa bean output and storage day.

  • Selected flow: Paperboard packaging
  • Flow property / unit: Mass / kg
  • Amount rule: Measured net quantity of Paperboard packaging, reconciled to the linked lot and process balance, then normalized once to the declared reference output; retain moisture and any density conversion evidence.
  • Value mode: foreground_record
  • Specificity: site_specific
  • Normalization basis: per declared reference flow

Polyethylene packaging film (cocoa_storage_services_film)

Record Polyethylene packaging film only when this material crosses the declared process boundary.

  • Selected flow: Polyethylene packaging film
  • Flow property / unit: Mass / kg
  • Amount rule: Measured net quantity of Polyethylene packaging film, reconciled to the linked lot and process balance, then normalized once to the declared reference output; retain moisture and any density conversion evidence.

Outputs

Product flows
Declared post-harvest dried-bean gate output (cocoa_declared_dried_gate_output)

Use only when the data package declares the extended post-harvest gate. It is a separate route output and must not be labelled as the platform's fresh farm-gate state.

  • Selected flow: Fermented, dried and graded cocoa beans at declared post-harvest gate [unmapped]

  • Flow property / unit: Mass / kg

  • Amount rule: weighed final lot after storage with moisture, grade and loss record

  • Value mode: Foreground record (foreground_record)

  • Specificity: Site-specific (site_specific) Raw activity or stage basis: per 1 kg wet cocoa beans at platform farm-gate reference and per 1 kg dried gate output.

  • Normalization basis: per declared reference flow

  • Basis kind: Process output (process_output)

  • Evidence kind: Collected record (collected_record)

  • Collection protocol: cp_cocoa_storage_records

  • Sources: icco-cocoa-processing; icco-cocoa-quality-requirements

No universal numeric bound is established by the cited balance identity or method. Derive a lot/site-specific check from measured inputs, outputs, moisture, growth where applicable, stocks, losses and uncertainty on compatible bases. Report numeric screening unavailable until supported; retain the measured exchange and investigate residuals without clipping or substituting a default.

Waste flows
Storage loss and quality downgrade (cocoa_storage_losses)

Record mould, pests, moisture change, foreign-material removal and other storage events. A downgraded saleable lot uses its intended-output card rather than this waste card.

  • Selected flow: Cocoa storage loss or rejected storage material [unmapped]

  • Flow property / unit: Mass / kg

  • Amount rule: Measure the actual damaged/rejected/lost stream by lot and destination, with mutually exclusive material quantities. Reconcile opening stock + receipts = accepted dispatch + other external transfers + rejected removals + independently evidenced physical loss + closing stock on matched moisture/component bases. Rework returned across this node is one paired transfer, or retained in closing stock if still held; it is not another final output. An unexplained balance difference is an investigation item, not automatically a physical waste or emission. Do not add removed lots to receipts, omit closing stock, or subtract a loss again when it is already part of this reported stream. Attribute and normalize each supported exported quantity once to accepted final output.

  • Value mode: Calculated value (calculated_value)

  • Specificity: Site-specific (site_specific) Raw activity or stage basis: per 1 kg dried cocoa bean storage input.

  • Normalization basis: per declared reference flow

  • Basis kind: Reference flow (reference_flow)

  • Evidence kind: Calculated from collection (calculated_from_collection)

  • Collection protocol: cp_cocoa_storage_records

  • Range: Storage-loss screening range

    • Range role: QA guardrail (qa_guardrail)

7. Allocation and Co-product Handling

Sequential wet, fermented, dried and graded bean states are not co-products and receive no allocation between states. First subdivide by pod lot, fermentation batch, drying batch and grading lot. Record every intended output hand-off before applying allocation.

8. Foreground Data Collection, Calculation, and Quality Rules

Inventory completeness: conditional named cards are examples of individual exchanges, not an exhaustive recipe or a requirement to use those products. Before completing a foreground package, enumerate every actual planting stock, nutrient, crop-protection formulation, asset material, operating service, carrier, packaging material, waste stream and applicable elementary substance separately, using its physical identity, state, native property/unit, origin or receiving compartment, and measured or method-calculated quantity. Missing identity or quantity remains a completeness gap, never an assumed zero. Preserve the actual lot and phase basis; do not sum intermediate transfers as additional final output or duplicate burdens included in purchased services.

Retain raw site, lot, cycle and stage quantities and denominators in each collection protocol. Reconcile stocks, losses, moisture and co-product attribution first, then normalize: normalized exchange = attributable raw exchange × declared reference quantity / accepted hand-off product quantity on the same boundary and measurement basis. Apply perennial-establishment and shared-operation attribution before this normalization. Never set an internal-transfer quantity equal to the final reference quantity. Per declared reference flow means the amount, unit and product state in section 3; the data package must declare its actual route and gate.

System boundary rules · 8
Rule IDApplies toRuleSource IDs
system_boundary_rule_1foreground_system_boundaryThe default foreground boundary starts with the managed cacao stand and declared crop year or perennial phase and ends with fresh wet beans in pulp at the farm gate. Purchased inputs use compatible upstream datasets at the actual receiving state, without also charging their included operations again.
system_boundary_rule_2foreground_system_boundaryThe reference gate is the platform's fresh, unprocessed farm-gate state. Fermented, dried and graded beans are downstream route states within the extended process map, not alternative meanings of the same reference UUID. The data package must state whether the farm-gate reference stops at wet-bean hand-off or whether a post-harvest extension is reported. Roasting, grinding, alkalization, pressing, cocoa liquor, cocoa butter, cocoa powder, chocolate, prepared foods, retail and consumer use are downstream and excluded.
boundary_01managed productionInclude cultivation, harvest, pod opening and wet-bean extraction through the fresh wet-bean farm-gate hand-off. Attribute establishment, replacement and termination to represented production. A pod-only hand-off cannot satisfy this reference boundary.fao-cocoa-production-guide, icco-cocoa-harvesting-post-harvest, iso-14044-2006
boundary_02reference gateTreat Cocoa beans with Production mix, at farm gate and Fresh, unprocessed produce as the declared reference identity. Do not use the UUID for fermented, dried or graded bean states without a separate identity decision.iso-14044-2006, mass-balance-identity
boundary_03pod breaking and fermentationPod breaking and wet-bean extraction are required before the reference hand-off: link harvested pod mass to wet beans in pulp, husk/placenta, rejects and losses. Fermentation is additional and conditional on the declared extension; link its drainage, rejects and output separately.icco-cocoa-harvesting-post-harvest, fao-cocoa-ota-code
boundary_04drying, grading and storageInclude drying/stabilization, cleaning, grade separation and pre-gate storage only when they cross the declared extension. Record energy, moisture, storage time, contamination controls and losses.icco-cocoa-processing, icco-cocoa-quality-requirements
boundary_05upstream inputsTreat purchased inputs, utilities, packaging, treatment and transport services as separately identified upstream inputs. Do not recurse into another cocoa PCR or silently use cocoa waste or paste as a bean input.iso-14044-2006
boundary_06losses and rejectsKeep field losses, damaged pods, unextracted beans, spoiled or unfermented beans, drying losses, mouldy beans, dust, shells, storage losses and rejected lots in the foreground until a documented recovery, co-product, treatment or disposal hand-off exists.fao-cocoa-ota-code, icco-cocoa-quality-requirements, mass-balance-identity
