1. Scope and Applicability
This PCR covers foreground production of fruits and nuts placed in a temporary preservation state for storage, transport, or transfer to a subsequent processor. The output remains intended for further processing and is not represented as ready for direct consumption. A concrete data package shall identify the fruit or nut, physical form, temporary preservation route, preservation medium or treatment, holding conditions, mass basis, and packaging system.
The category can include brine-based, sulfur-dioxide or sulfite-based, and other documented temporary preservation routes. Those routes are alternatives, not ingredients in one generic recipe. A hybrid operation shall model each actual treatment stage separately. This PCR does not prescribe a universal salt concentration, sulfur-dioxide dose, pH, contact time, storage temperature, or medium-to-product ratio.
Excluded are fresh, frozen, simply dried, sugar-preserved, ready-to-eat pickled, canned final, jam, jelly, paste, roasted, salted ready-to-eat, or otherwise fully processed products whose market state is no longer provisional preservation for later processing. Codex CXS 260-2007 is not used as a product specification because it excludes products intended for further processing; its direct-consumption pickled-product requirements shall not be transferred to this category without a separate scope determination.
