1. Scope and Applicability
This PCR guides foreground data package construction for one deliberately narrow product form: unformulated refrigerated pasteurized liquid whole chicken egg, with yolk and albumen retained in the natural whole-egg proportion, filled in a food-grade bulk container and released at the processor cold-store gate.
It covers shell-egg receipt, optional shell washing, breaking, inspection, filtration, whole-egg blending or homogenization, thermal pasteurization, rapid cooling, bulk filling, refrigerated storage, cleaning-in-place (CIP), and foreground waste and wastewater handling. The reference product is not frozen, dried, cooked, sweetened, salted, stabilized for ambient storage, fractionated, or reformulated.
Separate yolk, albumen, yolk-enriched blend, egg-white blend, frozen liquid, dried powder, cooked egg, chemically preserved product, high-pressure processed product, and manothermosonication routes are excluded. A dataset must not average any of those routes with the selected liquid-whole-egg route. Any facility using a materially different product form or lethality route requires a separately declared product-specific dataset and reviewed applicability decision.
