1. Scope and Applicability
This PCR applies to bird eggs that retain their shell and are preserved or cooked before leaving the processing facility. Covered routes include validated in-shell pasteurization, cooking in shell, food-grade oil coating, and alkaline or sodium-silicate preservation when the finished egg remains in shell. The foreground boundary begins with receipt of untreated shell eggs and ends with packaged product at the processing-facility gate after any required cooling and storage.
Fresh untreated eggs, hatching eggs, eggs broken for liquid or dried egg products, peeled cooked eggs, formulated egg foods, retail, consumer preparation, and packaging end of life are excluded. The bird species, treatment route, treatment validation basis, shell condition, package format, and storage condition must be declared. A data package may model more than one treatment route only as separately metered and reported product variants.
