# Meat of geese, fresh or chilled

## 1. Scope and Applicability

This PCR covers factory-gate production of goose meat that leaves the slaughter and processing facility in a fresh or chilled state. The foreground begins with accepted live geese at the declared facility gate and includes reception, stunning, slaughter, bleeding, scalding, defeathering, evisceration, carcass dressing, applicable cutting and deboning, chilling, refrigerated storage, packaging, sanitation, wastewater management, and on-site utility generation when present.

Goose rearing, feed production, hatchery operations and inbound transport are linked upstream processes rather than foreground operations. Distribution after the factory gate, retail, preparation, consumption and end-of-life are outside this foreground boundary. Frozen goose meat, goose fatty liver or foie gras, and edible or inedible offal as the reference product are excluded. Offal, feathers, blood, fat, skin, bones, heads and feet may remain visible co-products or wastes when generated by the reference-product system.
